Why does my frozen cream separate out when I defrost it? Is there a cream that will not do that? I do not like the taste of (non-frozen) long life cream. Gill

Hi Gill. Cream is a product that unfortunately is not at its best when frozen, and the fats and ye water can separate when frozen. Try shaking the cream thoroughly after thawing to re-mix – it will improve the consistency. Ensure that you defrost your cream slowly in the fridge and overnight.
