What is the best way of freezing rhubarb? It can be tough when it is defrosted.


The thing with Rhubarb is, the larger the stalk the tougher it is whether it is frozen or not. Select smaller-sized stalks of rhubarb for preparation where possible. Also make sure the Rhubarb is ripe before you cut it if you are growing it yourself, this will go along way in making it sweeter and of a crisp but yielding nature.  

Rhubarb can be frozen as whole stalks, but it is easier to store if it is first cut into pieces and packaged in a freezer container. If the stalks are fibrous, be sure to remove the stringy fibres and also clean the rhubarb before you put it into the container. For best results upon thawing, place the rhubarb in the coldest part of the freezer so that they will freeze as quickly and only store for up to 9 months.
