What quality points should be looked for in frozen vegetables before cooking them?
You’re in luck! Because pre-packaged frozen foods are frozen at peak quality, they also come to your table at the best quality they can be. Flash frozen pre-packaged food is great because it prevents undesirable large ice crystals from forming on the items and your food is less likely to become 'freezer burned', which happens when air reaches the surface of the food.
Therefore if you do want to freeze your own vegetables, we recommend that you blanch them (exposing them briefly to boiling water or steam) destroying enzymes, softening texture and setting the colour.
