Reading your website about freezing fish, quite a lot can depend on the size. We freeze our own shrimps, freshly caught from the sea here. They are very small of course, so they freeze very fast and well. Very good for then making frozen potted shrimps.

Yes interesting, thank you! These sound like shrimps as opposed to prawns and you’re right – they are very good for freezing. Indeed frozen prawns are one of the best and easiest frozen foods to buy and cook with – they are readily available, very good value and always great quality! There is no difference between a frozen prawn and a fresh prawn – except that a frozen prawn is most probably fresher because ‘fresh fish’ often takes more than a week to reach us!!
