Please explain what happens to chocolate in the freezer. It is difficult to keep it's colour and gloss. What is the white coating that appears? Thank you.
Frozen chocolate that has turned white is still edible and still perfectly delicious! It only changes colour because the cocoa butter is rising to the surface and has separated. This is caused by a rapid change in temperature. If you are going to put chocolate in the freezer, place them first in the refrigerator for 24 hours to prevent shocking the chocolate.
