My forced rhubarb will be coming into season soon. Can you tell me the best way to freeze some of it? Angela

Rhubarb, its a funny word – always brings a smile to my face!

The ‘how to freeze rhubarb’ rules  are as follows: 1) make sure the rhubarb is ripe before you cut it – this will help in making it sweeter 2) make sure to select smaller sized stalks for preparation when possible as its easier to store 3) if stalks are fibrous, make sure to remove the stringy fibres and clean before storing it in freezer container  4) place the rhubarb in the coldest part of the freezer so that it will freeze quickly and store up to 9 months and finally,  5) enjoy delicious rhubarb recipes all year round!
