Mediterranean Roast Chicken
Roasting is perhaps everybody’s favourite way to cook a whole bird.
But, we have a few tricks up our sleeves to share with you to make it that little bit extra special!

Impress your guests!
We have kept this recipe to a minimum to keep things really easy! Roast chicken is the nations favourite and we’ve added a little Mediterranean magic to really impress your guests! Recipe serves 4 and is ready in about an hour and a half
Ingredients
– 1.4kg frozen chicken
– 2 lemons, cut into wedges
– a handful of thyme
– 2 tbsp olive oil
– salt and pepper to taste
Method
Defrost your frozen chicken overnight in the fridge (click here to find out how to defrost frozen chicken). Preheat your oven to 200°C / fan 180°C / gas 6. Put the lemon pieces into the chicken cavity with a little butter (in the hole between the legs) and with the thyme also. Sprinkle on some sea salt and freshly ground black pepper. Put the chicken in roasting tin on its side. Roast for 20 minutes per pound (500g) and an additional 20 minutes at the end. Turn every 20 minutes. Meat is much more moist and breast does not dry out and you also get lots of lovely crispy brown skin. Serve with the pieces of lemon. The juices from within the roasting tin make your gravy – there is no need to make gravy.
When roasting chicken or turkey, check the bird is cooked by inserting a skewer into the thickest part of the thigh and pressing firmly on the flesh; if the juices run completely clear, the meat is cooked.
