Thai Style Red King Prawn Curry

Ingredients

  • 200g frozen King Prawns
  • 1 tablespoon cooking oil
  • 50g red thai curry paste
  • 2 cups coconut milk
  • 200g thai aubergine cut into quarters
  • 2 kaffir lime leaves
  • 1 stick lemon grass
  • 2 stalks fresh green peppercorns Red chillies holy basil to garnish

Method

  1. Heat the oil in medium sauté pan, add the curry paste, lime leaves, lemon grass and peppercorns and aubergines and cook gently for a few minutes before adding the coconut milk.
  2. Stir well and bring to a gentle simmer for about 10minutes, then add the frozen prawns and bring back to a simmer, stirring gently. Garnish with holy basil and red chilies.
