Thai Style Red King Prawn Curry

The perfect way to spice up your frozen prawns!

Ingredients
- 200g frozen King Prawns
- 1 tablespoon cooking oil
- 50g red thai curry paste
- 2 cups coconut milk
- 200g thai aubergine cut into quarters
- 2 kaffir lime leaves
- 1 stick lemon grass
- 2 stalks fresh green peppercorns Red chillies holy basil to garnish
Method
- Heat the oil in medium sauté pan, add the curry paste, lime leaves, lemon grass and peppercorns and aubergines and cook gently for a few minutes before adding the coconut milk.
- Stir well and bring to a gentle simmer for about 10minutes, then add the frozen prawns and bring back to a simmer, stirring gently. Garnish with holy basil and red chilies.
