Tasty pancakes from frozen with fresh fruit and grated coconut

Ingredients:

– 1 x packet of frozen pancakes
– 2  servings of frozen strawberries
– 1 x pot of Greek yoghurt
– 1 x  tablespoons of castor sugar
– 1 x orange
– Desiccated coconut (1 x table spoon)


Method:

Defrost your frozen pancakes over night in the fridge (Click here for information on how to defrost your frozen food safely). Gently brown the coconut in a frying pan with a little butter and leave to cool. Heat your pancakes in an oven dish with a lid, 180 degrees Centigrade / no.6 gas. Quarter your strawberries and place  them in a line along the centre of your heated pancake. Mix the castor sugar with your yoghurt, to taste, and pour over strawberries. Grate the orange zest over the yoghurt and gently roll up your pancake. Lastly, sprinkle the coconut over the pancake and serve.
