Pizza Fingers with Frozen Fish

A really good way to get your family eating fish with all its goodness! And, this pizza frozen meal idea will take you under 10 minutes to prepare 

Serves 8-10 pieces

 

Topping Ingredients

– 340g (12 oz) frozen mackerel fillets, cut into strips
– 85g (3 oz) cream cheese, softened
– 3 tomatoes, skinned and quartered
– 1 x small frozen pepper (available from supermarkets as bags of frozen mixed sliced peppers)

Base

– 1 x frozen pizza base 

 

 

 

Method

– Defrost your frozen pizza base
– Preheat the oven to 200°C/ 400°F, Gas Mark 6
– Spread the cream cheese over the base and top with mackerel strips, tomato and pepper slices
– Bake for 20-25 minutes until dough is risen and golden
– Cut into fingers and serve hot or cold, garnished with watercress and lemon slices
– Serve with fresh green salad

This meal can be prepared in 10 minutes and is perfect for the busy Mum –It does not even need to be defrosted!

When you have topped your frozen pizza, place it in the oven (see packaging for cooking times) and hey presto – your kids have cooked a delicious and easy meal!
