Mediterranean Mozzarella, Tomato and Basil Canapés

Take the sunshine back home to your family with these treats from the Med!

Ingredients

  • cocktail sticks
  • frozen potato wedges
  • mozzarella pearls
  • drained sunblush tomatoes
  • drained fresh basil leaves

Method

1. Take a 600g pack of frozen potato wedges and cook in the oven according to the pack instructions

2.Once they are cooked, simply thread a basil leaf, a tomato and a mozzarella pearl onto each cocktail stick, then use a potato wedge as the base for each canapé


 

Olive, Prosciutto and Pesto Canapés

Ingredients

  • cocktail sticks
  • frozen potato wedges
  • fresh green pesto
  • prosciutto crudo ham, cut in half lengthwise
  • pitted olives (black or green)

Method

1. Take a 600g pack of frozen potato wedges and cook in the oven according to the pack instruction

2. Place half a teaspoon of pesto into the scoop of the cooked potato wedge, then thread a piece of ham and an olive onto each cocktail stick

3. Use a pesto topped potato wedge as the base for each canapé

Cook’s Tips

• Don’t throw away the oil that comes with the sunblush tomatoes. Mixed with a little white wine vinegar, it makes a fantastic salad dressing

• You could use any thinly sliced air dried ham, such as Parma Ham, or Spanish Serrano ham
