Luxury Veggie Burger from Frozen
A delicious recipe from frozen foods – served with Buttered Wilted Spinach, Soft Poached Egg & Hollandaise Sauce

Ingredients
- Luxury Veggie Burger from frozen
- a bag of whole Leaf Spinach
- a knob of butter
- Sea salt and cracked black pepper to taste
- Pinch of ground nutmeg
- Vinegar
- 3 eggs
- one frozen onion
- one small glass white wine
For the Buttered Wilted Spinach
- In a very hot pan wilt down Whole Leaf Spinach in melted butter, sea salt, cracked black pepper & pinch ground nutmeg
- leave to one side
For the Soft Poached Egg
- In a Pan of rolling boiling water with a some vinegar, create a vortex by whisking the water very quickly & carefully dropping the egg into the center of the vortex
- Reduce the heat slighlty & gently poached for 2-3minutes, remove pan from the heat & set to one side
For the Hollandaise Sauce
- Whisk together egg yolks in a bowl over a pan of simmering water
- Once volume of egg yolks begins to thicken, gradually add some clarified butter a little at a time
- Once all the butter is added, season with Sea Salt & cracked Black Pepper
- Addition of a reduction of White Wine, White Wine Vinegar & Chopped Shallots can be added for further flavour inhansement if required
To Assemble the Dish
- Place Luxury Veggie Burger in centre of serving plate
- Place Soft Poched Egg, directly on top of Veggie Burger
- Dress the Veggie Burger over & around with the Hollandaise Sauce
- Garnish dish with some lightly dressed Rocket Leaves
