Fried Christmas pudding with forest fruits and clotted cream

Ingredients:

1 x frozen Christmas pudding
1 x pot of clotted cream
1 x tub of frozen forest fruits
1 x tablespoon of sugar

 Method:

Making a Christmas pudding from scratch can take several days, as you will need to leave the mixture overnight then steam the pudding for up to eight hours. TheNewIceAge Kitchen recommends buying a frozen Christmas pudding for this meal idea. You only need to take it out of the freezer the night before, and leave it to defrost in the fridge until its ready to be cooked.

Place the Christmas pudding on a baking tray and let it cook in a preheated oven at 180ºC for 30 minutes. Remove the pudding from the oven and slice into 8 portions.

 

 

Place a generous knob of butter into your frying pan and drop one slice into the pan. Ensure the pan is hot before frying the slices, and only cook one slice at a time to get the best result.

For the fruit compote, put the frozen fruit in a saucepan and add a tablespoon of sugar. Cook whilst stirring until tender.

Once the pudding slice has attained a crisp coating, place onto a serving plate, add the forest fruit compote and serve with a dollop of clotted cream. For a festive frosted touch, serve with a dust of icing sugar.

Cheat:

No cheat necessary for this one! When buying a frozen Christmas pudding, take it out and defrost it in the fridge overnight. It is then ready to be cooked, cut and fried the next day – leaving you with more time to enjoy with your dinner guests.
