Easy Valentines Day frozen dessert
Cheesecake with raspberries, a sprig of mint and a dusting of icing sugar
Having cooked your frozen salmon main we thought you’ve earned yourself an easily prepared and delicious frozen dessert!

Ingredients
- 1 x frozen cheesecake
- 1 x pot of summer fruit coulis
- 2 x servings of frozen raspberries
- 1 x bunch of fresh mint
- A dusting of icing sugar
Method
Defrost your frozen cheesecake by following the instructions on the packaging (generally speaking – leaving the cheesecake overnight in your fridge will defrost the frozen cheesecake thoroughly. Click here for information on how to defrost your frozen food safely). Do take the frozen dessert out of its packaging whilst still solid. If you try to remove it from the dish when thawed it may not keep its shape.
About an hour before serving your cheesecake, defrost the raspberries and place around the cheesecake and pour the coulis over. Using a sieve, gently dust your cheesecake with icing sugar and place the mint on top.
This recipe is so easy to serve but, if you're pressed for time, it will look pretty good straight from the packet. Dust it with some icing sugar if you have some and this frozen ready meal is the perfect time saver. Ready meals from frozen are perfect for the busy worker or the time stretched mum so, don't be proud, take your frozen dessert from the freezer and claim the frozen ready meal as your own!
