Roasted vegetables
Thanks to the likes of Jamies Oliver this is a party buffet menu that is ever more popular. So, to make some extra time in an already busy period and pick up a couple of bags of frozen carrots and parsnips from your local supermarket. These come in handy bags, and are already chopped into perfectly sized batons. And remember, what you don’t use you can just put back in the freezer for a later date! As they come already chopped and seasoned, preparation time is kept to a minimum. Ingredients
2 x frozen carrots2 x frozen parsnips
2 x frozen red onions
2 x frozen mixed peppers
3 cloves of garlic
Rosemary to sprinkle over
Method
Peel and cut the parsnips and carrots into batons. Cut the mixed peppers into long, finger length pieces, and the red onions into 6 segments each. Place all the ingredients into a baking tray including garlic, rosemary, olive oil, and salt and pepper. Roast in a pre-heated oven at 180ºC for 15-20 minutes. The vegetables are done when they are soft and brown. Can be eaten with a variety of dips: hummus, tzatziki sauce (cucumber, garlic and mint yoghurt). There – wasn't hard was it! Delicious frozen buffet ideas. You'll be able to do them blindfolded next year!
