Using Christmas Leftover Brussels Sprouts

In the true spirit of frozen food saving waste we've created a waste saving recipe!

Ingredients

  • 1 x packet of frozen mashed potato
  • Left over Christmas brussels sprouts / 200g of frozen brussels sprouts
  • 1 x onion
  • 1 x bunch spring onions

 

Method

Defrost your mashed potato (click here for information on how to safely defrost your frozen foods). Finely dice both the onion and spring onions. Cut your left over Christmas brussels sprouts in half (alternatively defrost some frozen Brussels sprouts and chop these). Mix the sprouts, onions and mash together. Roll the mix into large patties.

Heat some oil in a frying pan and when the oil is very hot place the patties in. Turn after 5-6 minutes when each side is crispy and brown. Serve with fresh salad.

Cheat: Buy ready made frozen Bubble and Squeak and add your leftover Christmas Turkey and cold meats!
