Asian King Prawn Salad (Serves 2)

Ingredients

  • 300g Udon Noodles
  • Frozen King Prawns 160g
  • 10 leaves Web or Round Lettuce
  • 85g frozen Bean Sprouts
  • 28g frozen Onion
  • 10g Mint
  • 10g Coriander The Dressing
  • 1 Part Sugar
  • 1 Part Vinegar
  • 1 Part Fish Sauce
  • 4 Parts Water
  • 1 Clove Garlic
  • 1 Chilli
  • Ground Peanuts
  • Grated Carrot

Method

  1. Wash the salad leaves, bean sprouts, mint and coriander in cold water
  2. Finely slice the onion
  3. Remove the mint leaves from the stem, then roughly chop the mint and coriander together.
  4. Pour boiling Water over the noodles and allow to soak for 15 minutes or until soft and cooked, drain and stop the cooking with cold water, drain again.
  5. For the Dressing, warm the water and dissolve the sugar, then add and stir in the vinegar and fish sauce. Leave to cool then refrigerate.
  6. In a pestle and mortar pound the garlic and chilli into a paste, add this to your dressing.
  7. Roughly grind the peanuts and grate the carrot and add these to your dressing

    Presentation

      1. In a deep bowl place the salad leaves, the noodles, sliced onion and chopped mint and coriander, top with the cooked and peeled King Prawns
      2. Pour over a very generous amount of the Fish Sauce Dressing and serve.
