Asian King Prawn Salad (Serves 2)

Ingredients
- 300g Udon Noodles
- Frozen King Prawns 160g
- 10 leaves Web or Round Lettuce
- 85g frozen Bean Sprouts
- 28g frozen Onion
- 10g Mint
- 10g Coriander The Dressing
- 1 Part Sugar
- 1 Part Vinegar
- 1 Part Fish Sauce
- 4 Parts Water
- 1 Clove Garlic
- 1 Chilli
- Ground Peanuts
- Grated Carrot
Method
- Wash the salad leaves, bean sprouts, mint and coriander in cold water
- Finely slice the onion
- Remove the mint leaves from the stem, then roughly chop the mint and coriander together.
- Pour boiling Water over the noodles and allow to soak for 15 minutes or until soft and cooked, drain and stop the cooking with cold water, drain again.
- For the Dressing, warm the water and dissolve the sugar, then add and stir in the vinegar and fish sauce. Leave to cool then refrigerate.
- In a pestle and mortar pound the garlic and chilli into a paste, add this to your dressing.
- Roughly grind the peanuts and grate the carrot and add these to your dressing
Presentation
- In a deep bowl place the salad leaves, the noodles, sliced onion and chopped mint and coriander, top with the cooked and peeled King Prawns
- Pour over a very generous amount of the Fish Sauce Dressing and serve.
