Stewed Autumn Fruits

Stewed Autumn Fruits, Honey and Cinnamon Tuiles, Clotted Cream Ice Cream

Ingredients

  • 1 bag of frozen stewed autumn fruits
  • 1 litre of ice cream
  • 1 jar (approx 200g) of honey
  • 2 cinnamon sticks
  • 1 pack of star anise
  • 100g caster sugar
  • 100g butter
  • 100g cups powdered sugar
  • 55g honey
  • 200g flour
  • 4 egg whites

Cooking Instructions:

  1. The frozen fruits can be put straight into a pan with 20ml water and the caster sugar/ spices. Stew over low heat for 45 minutes until softened into a compote consistency.
  2. For the tuiles: In a bowl or stand mixer, cream together the butter, sugar and honey. Add flour and mix to combine then slowly drizzle in egg whites while mixing on low speed until fully incorporated.
  3. Make tuiles on a silpat (a silicone baking matt) using an offset spatula and spreading batter very thinly. These may be made either using a template or done freeform.
  4. Place tray in oven and bake at 175°C for 7 to 10 minutes or until golden brown.
  5. To mould into shapes easily, remove tray halfway through baking and separate each tuile from the silpat, by running an offset spatula underneath. Return to oven to continue baking.
  6. When finished, mould into desired shape, working quickly. If the tuiles cool, return them to the oven to warm until pliable again. It helps to work near the oven, leaving the tray inside with the door open.
  7. To serve, pour a helping of fruits onto a plate, add a scoop of ice cream and a tuile. Add a star anise for decoration.

Yvonne says:

This frozen dessert is great to add some extra fruity goodness to your meal. Use a selection of frozen berries in the stew. Berries are not only packed with antioxidants, they are also powerful immune boosters, as are pears. They are also great to detoxify! The cinnamon in the tuiles will help you balance your blood sugar levels helping you keep your energy high and your festive mood going all day. We all love ice creamfrom time to time, but if you're looking for a healthier alternative use dairy-free ice cream to reduce saturated fat levels.Ice cream is of course a frozen ready meal although we may not look at it that way – its a frozen dessert that is ready to serve with little preparation and will save you time!

Cesarina Says:

This frozen dessert will save you time and money! There are several financial benefits to using frozen food for your festive meal. The first advantage of using frozen food is that you only use what you need, which means that there's no food waste following the meal - so you're not stuck with a turkey and roast potato diet for the next three days after Christmas! Frozen food also means you can spend the lowest possible amount on your festive feast but without reducing quality, freshness, choice or nutritional values, and if anyone in your family has special dietary requirements eating frozen food means you can split the portions. Everyone can eat what they like, but there's still little or no waste.
