I am cooking some frozen salmon fillets. Why would the recipe I am following say I should first wash the salmon with lemon juice and salt, and then rinse in cold water, and dry with kitchen towel, before preparing for the oven?
What an interesting question Gill. Since we have not seen the frozen fish recipe you’re using, and it isn’t one of our frozen food recipes the apparent answer would be that marinating fish, in this instance salmon, in lemon juice neutralizes the odour when cooking.
