Hello, your cheese sauce should be perfectly fine for freezing and should not curdle, provided it is kept in an appropriate container, but it can depend on what cheese you are using, as some are more prone to separating than others. Sometimes cream can be problematic when freezing though – does your cheese sauce have cream in it?
