Would mince still be okay if I froze it then defrosted it then left it sitting out for a few hours then froze it again?

As far as I understand it, you have bought some chilled mince, frozen it, and then defrosted it with the intent of cooking the meat, but instead of choosing to cook the meat you refroze it? There is no absolute and definitive answer in this case because there are many variables, for example: If you left the meat out at room temperature, bacteria would begin to grow and we are not able to tell how fresh the meat was when you bought it. For these reasons you need to ensure that your meat is cooked thoroughly after defrosting the meat for the first time. I would not recommend eating the mince if you have frozen it for a second time.
